Executive Chef at Golden

Job Description

Southern Foodservice Management  is seeking a highly motivated, entrepreneurial, ambitious, and creative Executive Chef for our corporate dining facility located in Golden, Co.  This client location requires extensive catering for high level executives and visiting clients from around the world.  We are seeking a Chef who has demonstrated creativity in menu design, is skilled in the use of seasonal and local ingredients, cooks great tasting food and has exquisite presentation skills.
 
This position is a hands-on, working Executive Chef position and will be directly responsible for the preparation and execution of all catered events while directing the daily preparation, execution, and quality of all other food services.  The Executive Chef is responsible for all kitchen management activities for this location.  Prior experience as an Exective Chef or Executive Sous Chef in a mid to high volume setting is required.  Experience in a full service restaurant or hotel is preferred, with any related experience in contract dining a plus.

Duties and Responsibilities: 

  • Prepare special event menus, with particular focus on quality, timing, taste, and presentation of any catered events.
  • Participate and direct preparation, presentation, and daily service of all prepared foods with front line staff.  Clearly communicate quantity and quality expectations to staff and provide feedback with ongoing training as neeeded.
  • Provide staff with standardized recipes and ensure that standardized recipes are utilized to provide consistent product taste and quality.  Make adjustments to recipes as needed to provide great flavor. 
  • Monitor of vendor deliveries to ensure that products received meet quality standards. 
  • Development of daily menu, special events and marketing events in collaboration with General Manager and Catering Manager
  • Perform administrative functions as necessary, including maintaining records required for food safety programs and production data.
  • Personnel management activities, including candidate selection, training, development, and disciplinary procedures when required.
  • Maintaining safety and sanitation standards in accordance with local regulations and company policies. 
  • Supervise and participate in the cleaning and maintenance of all kitchen equipment. 
  • Ensure a safe work envornment for all staff, including compliance with OSHA regulations 

Job Requirements

The ideal candidate will possess the following:
 
  • Graduate of a Culinary School or ACF recognized program, or equivalent experience in a similar position
  • Exibit attention to detail in the preparation and presentation of food
  • Excellent understanding of food cost management techniques, including ordering and inventory management, effective product selection, production and waste management
  • Ability to create new recipes 
  • Excellent oral and written communication skills
  • Organizational skills and demostrated ability to prioritize and manage multiple tasks
  • Ability to interview, select, and develop employees 
  • Excellent leadership skills and ability to lead a diverse workforce
  • Basic computer skills (i.e. Microsoft Word, Excel, Internet Explorer, Outlook and PowerPoint)
  • Prior experience in menu development, menu cost analysis and production management
  • Knowledge of HACCP and Food Code, Sanitation and Safety Procedures
  • Understanding of basic accounting principles
  • Is currently ServSafe Certified, or will be able to obtain certification within 90 days of employment
